Chili on Cornbread Waffles

This is a great fall recipe! Very filling, but delicious :)

Ingredients:
- Chili (you can use canned or make your own in the crockpot, I used my crockpot chili)
- Cornbread Mix
- Sour Cream
- Cheese
- Green Onions

Directions:
- Make Cornbread according to box directions (I love the Honey Krusteaz Cornbread)
- Heat waffle iron and spoon cornbread mixture in the the waffle iron.
- Depending on your waffle iron each cornbread waffle takes between 3 and 5 minutes.
- Top waffle with cornbread and your favorite toppings!

Aloha Teriyaki Burgers

This is one of the yummy recipes out of my new cookbooks from Six Sisters Stuff! I love their recipes, they are all so good! Here is the recipe for the Aloha Burgers...

Ingredients:
- 1 lb. Ground Beef
- 1/2 cup Teriyaki Sauce  (I used Very Teriyaki Sauce)
- Salt and Pepper to taste
- Sliced Cheddar Cheese
- Sliced Grilled Pineapple (I used canned pineapple, put it on the grill for a few minutes on each side)
- Shredded Lettuce
- Mayo
- Tomato (we used ketchup)
- Buns

Directions:
- Mix beef, teriyaki sauce, and salt and pepper - form patties
- Rub on more teriyaki sauce on top of the burgers before grilling. Allow sauce to marinate on top of meat while the grill heats up.
- Cook burgers 3-5 minutes on each side for Medium doneness. Continue to add more teriyaki sauce as the burgers are cooking.
- Add cheese and allow it to melt
- Serve the burgers on bun with grilled pineapple, lettuce, mayo, tomatoes, and ketchup.

Salmon Stir Fry

Salmon Stir Fry

Ingredients:
- 2-3 Salmon Fillets 
- 1 tablespoon garlic
- 1/4 cup Orange Juice
- 1/4 cup Soy Sauce
- 2 tablespoons sesame oil 
- 1 tsp. ground ginger 
- Sliced Green Onions


Directions: 
- Cut salmon into cube size pieces 
- Mix remaining ingredients (besides the green onions) together and add salmon to marinade 

- Marinade salmon for 30 minutes in refrigerator
-  Cook Salmon in Wok on high heat - turn salmon carefully with tongs to cook evenly - this is the tricky part, because you don't want to get crazy with your flipping and have the salmon fall apart. - Cook until cooked through (about 3-5 minutes on each side)

- Add sliced green onions once your salmon is cooked



Serve and enjoy! 

- I made green beans and white rice to go with it.

Dad's Venison Backstraps

This recipe is by far my favorite venison recipe! If you don't have venison, you could use beef instead. We love to have it with onion potatoes and a vegetable. Hope you enjoy it! Here is the recipe...

Ingredients:
- 2 lbs. Venison Backstrap Meat (cubed)
- 2 cups Brandy
- 1/3 cup Butter
- 1 Pint Heavy Whipping Cream
- Salt and Pepper (To Taste)

Directions:
- Brown meat with butter in an electric skillet 
- Once meat is browned (not fully cooked through) - remove and set aside
- Add brandy to butter and meat drippings
- Heat and light brandy mixture - to burn alcohol off: SAFETY TIP - make sure you have plenty of height space for the flame to go - probably at least 2 feet. - sometimes we have done this step outside.
- Once your flame has died down, add heavy whipping cream.
- Bring to a boil and then return the meat to the pan.
- Add Salt and Pepper to taste
- Continue to cook (simmer) until meat has cooked through (about 20-30 minutes, check as it is cooking, you don't want the meat to get tough)
- Sauce will thicken as is simmers.
- ENJOY! :)

Serve with Onion Potatoes and a Veggie - we did Green Bean Casserole

Fettuccine Chicken Alfredo

For this meal I did it in two steps. I cooked the chicken separately in the pressure cooker before doing the pasta.

Chicken
- 4-5 Chicken Breasts
- Salt and Pepper
- 1/2 cup of chicken stock

Cook Chicken in pressure cooker on high pressure for about 12 minutes. Remove chicken once it is finished a cut it up into bite size pieces and set aside.

Once pasta is finished toss with alfedo sauce and cooked chicken. Enjoy!

Chicken Pot Pie

Ingredients:
- 3-4 Chicken Breasts  (cubed)
- Salt and Pepper
- Paprika 
- 4 golden potatoes
- 5 medium size carrots (peeled)
- 1 cup frozen peas
- 1 cup sour cream
- 1 can cream of chicken soup
- 1/2 cup chicken stock
- 2 pie crusts (I used Pillsbury)
- 1 egg white 

Directions:
- Cook Chicken and add salt, pepper, and paprika (set aside)
- Cook potatoes and carrots until tender (I steam cooked mine in the microwave)
- Combine sour cream, cream of chicken, and chicken stock
- Add cooked potatoes and carrots to soup mixture. Add peas and cooked chicken.
- Place pie crust in pan - poke holes in the bottom of crust and then add your filling
- Place top crust onto of filling. Poke holes on top.
- Whisk egg white and brush on the top of crust 
- Bake at 425 for 30-35 minutes.
- Let stand for 3-4 minutes before cutting

Tilapia and Shrimp with Pasta

 Ingredients:
- 2 Tilapia filets
- 1/2 bag of medium size shrimp (shell on)
- Chili powder
- Chipotle and Roasted Garlic seasoning
- Paprika
- Salt and Pepper
- Oregano
- 1 stick of butter (1/2 cup) 

Directions: 
- Season fish and shrimp in bowl with seasonings (I didn't measure, I just put a little of everything in the bowl)
- Melt butter in cast iron pan and add tilapia (I did my tilapia and shrimp together and the tilapia took longer to cook - so I would recommend adding the shrimp a few minutes later)
- Cook tilapia 3-5 minutes on each side
- Add shrimp - cook slightly and then put the pan in the oven
- Cook both the tilapia and shrimp at 375 for 10-15 minutes, until fish is flacky. If shrimp gets done first take it out then put the fish back in the oven.
- Cook pasta and toss it with olive oil and italian seasoning to serve on the side.

Rice with Black Beans and Bell Peppers

Ingredients: 
- 3 cups of cooked white rice
- 2 cans of black beans
- 1 red bell pepper
- 1 yellow bell pepper
- 1 large onion
- 1 tsp. cumin
- 1 tsp. Adobo seasoning
- 1 1/2 tsp. Oregano
- 1 tbsp. minced garlic
- 2 tbsp. tomato bouillon
- Mexican Cheese blend

Directions: 
- Cook rice in rice cooker
- Meanwhile, cook peppers, onion, and seasoning (accept the tomato bouillon) until peppers are tender.
- Add Black Beans
- Add Tomato bouillon
- Mix in cooked rice on medium-high heat 3-5 minutes.
- Serve, top with cheese, and enjoy!
   Add Sriracha sauce if you want extra spice

Cook Rice, and prep other ingredients

Cook in wok on the stove top 

Here is the Tomato Bouillon I use. You can find it at Meijer in the Mexican Food Isle. 

Ready to eat in 30 minutes!


Mexican Twice Baked Potatoes

Ingredients: 
- 4 Russet Baking Potatoes
- 1/2 pound of ground turkey
- 1 cup of queso cheese
- 4 Tbsp. Milk
- Cumin - about 3/4 tsp.
- Chili Powder - 1 tbsp.
- Garlic (minced) 1 tbsp.
- 1/2 can refried beans
- 1 cup of your favorite salsa  
- Mexican Cheese Blend
- Sour Cream (optional)

Directions: 
- Bake your potatoes at 375 for 1 hour.
- Once baked, cut your potatoes in half and scoop out the potato pulp from the inside and put into mixer.
- Add queso cheese, milk, and salt and pepper. Blend until smooth.
- Scoop mashed potato mixture into the potato skin shell.

Meat:
- Cook Turkey and add your cumin, chili powder, and garlic. Add your beans and salsa to meat. Mix and heat together 3-5 minutes.

- Top your potatoes with meat mixture and add Mexican cheese on top.
- Bake in the oven at 375 for 5 minutes (or until cheese is melted)
- Serve with sour cream and green onions! Enjoy!

Top with cheese, and bake for 5 minutes at 375

French Bread BBQ Chicken Pizzas


Ingredients: 
- 1 1/2 lbs. Chicken Breasts
- Your favorite BBQ sauce
- 1 Onion (sliced)
- 1 tablespoon (approx.) of Worcestershire sauce
- BBQ dry rub seasoning (optional)
- small italian bread rolls, sliced in half (I got mine from Costco)
- Shredded sharp cheddar cheese 

We had the kale salad from Costco with our BBQ pizzas :)

Directions: 

Cook chicken, bbq sauce, onion Worcestershire sauce, and rub in crockpot for 4 hours on low.




Once cooked, shred your chicken and place it back into the sauce




Take your bread, slice it and place it on your baking sheet. I used my Pampered Chef baking stone.


Add sauce from the crockpot to the tops of your bread, then add the chicken. I added the sauce separately so it would soak into the bread. 






Add your cheese and you are all set to put it in the oven!




Bake at 400 degrees for 15 minutes and Enjoy!
